Salmon & Feta Salad

I was in the mood for Greek salad but I didn’t have all the ingredients to make. And I was too busy to drive to the local Greek restaurant to buy one. So I dug around in my fridge and made the closest thing to it. Luckily I had a few pieces of salmon thawing out for dinner to add to my salad. This recipe took me less than 20 minutes and it’s delicious.

  • Romaine lettuce
  • Feta cheese (they make skim milk versions-that’s what I used)
  • Green Greek garlic olives Mediterranean flavored
  • Red cabbage
  • Avocados
  • Fresh garlic
  • Onions

Season your salmon with ground pepper and sea salt. Heat up a pan over medium heat, add the salmon, onions, and garlic, cook until ready.  In a small container that you can shake, add olive oil, sea salt, ground pepper, vinegar,  oregano, and shake! This is your dressing to add on top of the salad. Cut up your salad, red cabbage, wash and drain. Put your salad on palate, add the red cabbage, feta cheese, avocados, olives, salmon  with onions, and lastly pour the dressing over the salad.  Serve and enjoy 🙂
