Quinoa, soybeans in fresh tomato salsa

This was a super fun recipe I made up on the fly! For those who don’t know I don’t like to eat meats once in a while. I personally think it’s good to give the body a rest from meats if not all together. I will either go Vegan or Pescatarian.  Either way, I come up with tasty recipes that are filling.

WHAT YOU NEED

– 1 egg white or 1 egg beater (I used an egg beater)

– 1/2 cup of soybeans

– sea salt

– cayenne pepper

– yellow onion

– 2 small tomatoes or 1 large one

– 1 tablespoon of olive oil

– Small bunch of parsley or parsley seasoning

– 1 cup white quinoa

– 1 small avocado

 

HOW TO PREPARE

This is super easy to make! Wash and boil your soybeans apart until they are soft. When making your quinoa, put parsley, sea salt, garlic powder and boil them with these ingredients. When the quinoa is done, add a teaspoon of olive oil, mix it together and let sit. In a non stick frying pan, mush up your tomatoes, add a small handful of diced onions, 1 tablespoon of olive oil, season to taste with sea salt, cayenne pepper and stir until ready. Put the quinoa on your plate, add the salsa on top, and a few avocado slices and BOOM!! You are ready to eat. Enjoy 🙂
