I love these and use them as a meat substitute when I don’t want to eat meat.
WHAT YOU NEED
- 2 pounds of red or black beans
- 1 whole head of peeled garlic
- 1 whole onion (any kind)
- Sea salt to taste •2 bay leaves (hoja de laurel)
HOW TO PREPARE
Clean the beans, sometimes they have little rocks in them you don’t want to eat. Wash them. In a large pot, boil the water alone. For 2 pounds of beans, add about 1 gallon of water. When the water is boiling, add the uncooked beans, onion, whole peeled garlic head. Cover the pot and keep checking them until they are nice and soft. Never add the salt until their are soft/tender. When they are tender add salt to taste, stir them, then cover the pot, let simmer for a few minutes and serve. Enjoy 🙂
