Shrimp Scampi In a Light Creamy Sauce With Pasta

By popular demand! I’ve been playing with a lot of recipes and this one was soooo deliciously guilt free. You don’t need to add all the unhealthy butters and heavy creams. Remember, just because this is a healthier recipe does not mean you can overindulge. Have a nice serving size not the whole recipe! If you don’t like shrimp you can add any of your favorite lean meats, chicken, fish, turkey, or even tofu. Try this out and let me know your thoughts in the comments.

WHAT YOU WILL NEED

Serves 4-6

  1. Unsweetened Almond Breeze milk – 1/4 cup
  2. Plain Greek Yogurt – 5 tablespoons
  3. Lemons – 1  (if you do not want a lemony taste skip the lemon)
  4. Garlic cloves – 4
  5. Fresh chopped parsley leaves – 1/4 cup
  6. Red & yellow bell peppers – 1/4 cup
  7. Red pepper flakes – not spicy
  8. Wheat pasta – angel hair is my favorite 1 pound
  9. Shrimp – peeled & washed 1 pound
  10. Sea salt
  11. Cooking spray – any kind

HOW TO PREPARE

Boil the pasta over medium heat in water and add 2 tablespoons of sea salt then drain. While the pasta is boiling, heat up a non stick skillet, add cooking spray and minced garlic cloves (4). Heat until slightly golden, add the red & yellow belle peppers, then add 1/4 cup of Almond Breeze milk, and 5 tablespoons of Greek yogurt, and squeeze the 1 lemon in it too, add sea salt to taste. don’t go overboard with the salt. Let it thicken a little, usually about 5 minutes. Don’t let it evaporate because you still have to add the rest of the ingredients. Turn off the skillet and let it sit. While the garlic and Greek yogurt with milk is cooking, in another skillet or any kind of non stick pan that would work for making pasta – spray it with cooking spray, add the shrimp let it cook all the way through, usually about 3- 5 minutes. Then add the boiled pasta, shrimp, red pepper flakes, and parsley into skillet with the Greek yogurt, milk and garlic cloves. Heat all together over medium heat for another 2-3 minutes and SERVE! You can also add spinach or broccoli for added veggie zest. Make sure to serve immediately and add ground pepper over the top if you like. Now go ahead and…..Enjoy 🙂

    Thank you i needed your inspiration so much right now ive just began my healthy journey and going alot harder in my workouts 5 days a week at least an hour a day,and some things are going on in my life right now that made me want to give up.You gave me back my spirit to not only live this life myself but to get my son and bf on track.we now exercise together and eat alot cleaner together.i still have my obstacles and days when i want to give up but i just think of you. 😉
