Superbowl Snacks – Cheesy Stuffed Portobello Mushrooms

These are soooooo good and ridiculously guilt free!! The mushrooms taste like bread. I’ve heard of many people using these for burgers which I have yet to experiment with but WILL keep you updated.


  1. Medium portobello mushrooms
  2. Skim milk cheddar or mozzarella cheese
  3. Fresh pico de gallo from the store or make it at home yourself
  4. Tomatoes
  5. Onions
  6. Seasonings – sea salt, garlic powder
  7. Fresh basil


This is super easy to make, tasty and filling.  Please make sure to wash your mushrooms thoroughly!! Heat up your oven at 350. If you don’t have pico de gallo, dice up tomatoes into little cubes, dice up onions, add basil, and mix in a bowl. In a bowl, season the onions, tomatoes, with sea salt and garlic powder. Smash the tomatoes just enough to make a tiny bit mushy with a little chunk to them.  Shred your cheeses  together in a bowl. Put foil paper on a cookie sheet or any rectangular baking pan, spray with your favorite cooking spray. Put the mushrooms on the foil face up (the part that looks like a bowl) put a little cheese first, then add the tomatoes or pico de gallo, and add a little cheese on top. Remember not to drown your  mushrooms with cheese. It defeats the whole purpose of making it healthy. Bake for 20-35 minutes or until done and SERVE 🙂

    I can’t think back when was the last moment when i read that great interesting blog post. Must have been a very long time ago … Anyhow, preserve the excellent work.
