Garlic Chicken & Cheese Stuffed Jalapeños YUMMMM!!!! All my recipes are super easy to make and sooooooo delicious! You will truly enjoy making these. If you don’t like chicken use veggies, if you don’t like veggies use turkey or red meat. The possibilities are not limited and are endless. Enjoy 🙂   WHAT YOU NEED – Serves 2

  1. 6 or 8 large jalapeños
  2. Plain greek yogurt – use 4 tablespoons
  3. Daiya Vegan Cheese in mozzarella flavor (you can skip this)
  4. Fresh garlic – 2 garlic cloves
  5. Sea salt
  6. Olive oil – 1 teaspoon
  7. Paprika – a sprinkle
  8. Ground pepper – a sprinkle
  9. 1 large chicken breast
  10. Cooking spray – I use Coconut spray

HOW TO PREPARE When I say this is super easy to make it really is! On a non stick baking sheet pan, bake your chicken in the oven on 400 for about 25-30 minutes or until ready. Take it out of the oven and put it on a dish to cool. Mince your garlic cloves into tiny diced bits. Put it in a bowl, add a sprinkle of sea salt, ground pepper, and paprika. Cut your jalapeños right down the middle in 1/2 Rub the garlic in the bowl all over the jalapeños. Turn on your stove to a medium to low heat, spread your cooking spray on a non stick pan, wait for it to get warm then add the jalapeños. Cook jalapeños on each side (about 3-5 minutes each side) do not let them burn. While that is cooking, take your cooled down chicken and shred it with your hands. Put it in a bowl, add 4 tablespoons of Greek yogurt, add a handful off day cheese, 1 tea spoon of olive oil, a little sea salt for taste, paprika, and ground pepper. Mix it all together until it becomes almost like a pastie dip. When the jalapeños are done, take them out of the pan and put them on a plate to cool. When the jalapeños cool add the chicken contents in the middle of each jalapeño. The pan where the jalapeños will have a few toasted pieces of garlic. Pick them up with your fingers and spread them over the top of your jalapeños and BAMMM it’s ready to eat!!
