Red Potato Salad

Deliciously healthy red potato salad! This is delicious and protein packed. Have it with lean meat and some veggies on the side.

WHAT YOU WILL NEED

  1. 3 pounds of red potatoes
  2. 1 tablespoon of sea salt
  3. 2 teaspoons of mustard
  4. 3 large celery sticks
  5. 3/4 cup of red onions
  6. 1 tablespoon of garlic powder
  7. Ground pepper (sprinkle a little to taste)
  8. 1 cup of plain Greek yogurt
  9. 8 hard boiled eggs
  10. 1 tablespoon of garlic powder

HOW TO PREPARE

This is very easy to make. Boil your potatoes in a large pot until soft over low to medium heat, usually about 15 minutes. Drain and set aside. Boil eggs in a pot for about 15 minutes over low to medium heat. Drain the water and add cold water immediately.  Peel open, do not keep the yolk (throw it out) set eggs aside. Wash and dice the celery and onions and set aside. Cut the potatoes and eggs into squares. I like to keep the skin on the potato. Put them together in a bowl with the onions and celery. Add the Greek yogurt, salt, ground pepper, garlic powder, mustard, then mix all together and SERVE! Enjoy 🙂
