Red Beans and Rice

This is a traditional recipe in my country called “Casamiento” it would be somewhat similar to red beans and rice. Of course I had to make it with a healthy twist! Enjoy it alone or with a side of any lean meat and veggies.

WHAT YOU WILL NEED

  1. Red beans or black beans with the soup – 5 cup of beans with the soup CLICK HERE FOR MY BEAN RECIPE (add 2 extra cups of water to make it “bean soup”
  2. Brown rice – 1 pound
  3. Garlic – 2 small chunks
  4. Onion – 1/2 any color
  5. Bell pepper any color
  6. Sea salt to taste

HOW TO PREPARE

This is very easy to make. Make sure when you use the cup of beans with the soup there is more soup in your cup than beans. Over low heat, in a non stick deep pan like this or any large pot to make rice with spray with cooking spray – add the brown rice, diced garlic, diced bell peppers, and diced onions. Slowly stir fry all together for about 10 minutes. Add the bean soup, stir until all ingredients are mixed together, add sea salt to taste. Then let it cook covered over low heat for about 30 minutes or until the rice is soft. Brown rice sometimes takes a little longer to cook so make sure you are cooking it on LOW HEAT or else the bean soup will prematurely evaporate. The soup is supposed to absorb into the brown rice which is what will help cook it. Just don’t cook it on high as you want it to slowly cook and not evaporate before it is time. When done, turn off the heat, let it sit for about 10 minutes and SERVE! Enjoy 🙂
